Bogura's mishti doi

Sweet yoghurt set in clay pots is a favourite across Bangladesh, and Bogura's doi is the best known of all.
Mishti doi is made by slowly boiling milk with sugar or date jaggery until it thickens and turns slightly caramel in colour, then setting it with a starter culture in unglazed clay pots that absorb excess moisture. Bogura in the north is especially famous for it, and pots of Bogura doi are carried as gifts across the country. It is served at weddings, festivals and family gatherings, usually at the end of a meal.
